We stuff our pillows in a duffle bag under the dinette when it's closed up. Sheets and quilt stay on beds. Best way to do it.
Our bedding works on the pull outs of our pop up. We use fitted sheet, flat sheet and sleeping bag unzipped used as a comforter. We bring two extra sleeping bags (as a spare or if it's cold). Also we just purchased blow up pillows this year to save space.
We are dehydrating our meals this year to save cooler space and space in general – prep and cooking done at home. Just add water.
My family bought a new 2014 Viking. I can tell you after 200+ nights in it. You can get it to the point where you can decide to go camping on your way home from work on a Friday night, pack a cooler and go! It’s fun watching you go through all the changes we did. Your right on meals! Oatmeal, sandwiches, hot dogs and canned chili! We have 57 Jr. Ranger Badges and counting. Good luck and keep posting. Oh! If your interested I have what I think is an awesome system for doing dishes. I even recorded a video I just need to edit and post it. If you are really interested you maybe the inspiration I need to get r done. We spent a Thanksgiving in Patagonia and it was a great home base for many National Park properties and Kartchner caverns. Sorry about the rambling but your bedding will fit after about 75 nights when the mattresses start to soften up. Here’s a tip. I put a high density 1/2 foam pad under my mattresses to stop our hips and shoulders from hurting.
